How to Brew (Best Results)

Hot Brew (Umami-forward)

Tea: 3g (about 1 heaping tsp)
Water: 120–150 ml (4–5 fl oz) at 75–80°C (167–176°F)
Steep: 60–90 seconds, then pour to the last drop
2nd infusion: 80–85°C (176–185°F), 30–45 sec
3rd infusion: a touch hotter, 20–30 sec

Cold Brew (Sweet & Smooth)
