HEKISUIEN Matcha “DAIGYOKU”
Uji Kyoto — Balanced Umami & Bitterness

A refined Uji matcha with a classic balance of umami and gentle bitterness — enjoyable as usucha, and exceptionally rich when used for lattes.

Crafted by HEKISUIEN, a long-established Uji matcha producer with over 150 years of tradition — featuring carefully aged tencha and slow stone-milling for smooth texture.

Choose Your Size

DAIGYOKU is available in two sizes. If you’re new to this matcha, start with 30g. If you drink matcha regularly or make lattes often, 150g offers better value per gram and fewer reorders.

Quick guide: 30g = try first / occasional use. 150g = daily matcha / frequent lattes.

Why We Recommend This Matcha

DAIGYOKU is HEKISUIEN’s signature matcha, known for a satisfying balance of umami and gentle bitterness. This makes it approachable for matcha drinkers who prefer a classic Uji character — smooth, structured, and not overly sweet.

It can be enjoyed as usucha, and when used in milk-based drinks it becomes a luxury-style latte due to its depth and aroma.

For latte drinkers: Expect a deeper, more “matcha-forward” latte — this is a premium choice for milk.

Tasting Notes

  • Aroma: Classic Uji fragrance with layered depth
  • Taste: Balanced umami with a clean, gentle bitterness
  • Finish: Smooth texture with lingering aroma
Recommended for those who want a traditional Uji profile — and for anyone seeking a truly premium matcha latte experience.

How to Enjoy

Usucha (Traditional):
Sift 2g of matcha, add 60ml hot water (about 80°C / 176°F), and whisk until frothy.

Matcha Latte (Luxury Style):
Mix 2g with 60ml hot water, then add 150ml milk. Because this is a higher-grade matcha, you can reduce sweetener to let the aroma shine.

About Hekisuien

Hekisuien Uji matcha factory

Founded in the third year of the Keio era, HEKISUIEN is an esteemed Uji matcha factory with over 150 years of history. Since its inception, they have specialized in Uji tea manufacturing, continuing to produce high-quality matcha using traditional methods.

150 Years of Tradition: Aged Uji Matcha

Aged tencha leaves under temperature control

HEKISUIEN pursues a distinct sweetness combined with rich body and deep umami. Rather than grinding tencha immediately after spring processing, they allow it to rest for a period — creating a smoother, more rounded taste.

Tencha is aged under precise temperature control for a fixed duration before stone-milling, resulting in a mellow and palatable flavor.

The Art of Hekisuien Matcha Production

Traditional stone mill grinding matcha

HEKISUIEN’s stone-milled matcha is produced at just about 40g per hour per stone mill. While this is not efficient compared to high-speed grinders, the traditional pace helps protect matcha’s color, aroma, and smooth texture.

FAQ

Is DAIGYOKU suitable for tea ceremony (usucha)?

Yes. DAIGYOKU can be enjoyed as usucha with a classic Uji balance — umami with a clean, gentle bitterness and a smooth finish.

Is DAIGYOKU suitable for matcha lattes?

Yes — but it will be a luxury-style latte. Because DAIGYOKU is a higher-quality matcha, its aroma and depth remain noticeable even with milk. If you usually use culinary matcha for lattes, this will feel significantly more refined.

Which size should I choose?

If you’re trying DAIGYOKU for the first time or drink matcha occasionally, start with 30g. If you drink matcha regularly or make lattes often, 150g offers better value per gram and fewer reorders.

How should I store matcha?

Keep cool and dry. Refrigerate after opening when possible. Avoid light, heat, and moisture, and reseal tightly after each use.

Note: Matcha flavor and color can vary slightly by season and production lot — this is a natural characteristic of tea.
