The Taste Profile of DAIGYOKU

Daigyoku is Heikisuien’s proud masterpiece, boasting a well-balanced flavor of **Umami and Bitterness**. It is the perfect choice of matcha for those who are new to drinking it.
About Hekisuien

Founded in the third year of the Keio era, as the Edo period was coming to an end, Hekisuien is an esteemed Uji Matcha factory with over 150 years of history. Since its inception, we have specialized in Uji tea manufacturing, continuing to produce high-quality matcha using traditional methods.
150 Years of Tradition: Aged Uji Matcha

Hekisuien's matcha pursues a distinct sweetness combined with a rich body and deep Umami. Tencha (raw tea leaves) that have been nurtured with abundant nutrients and shaded from the sun achieve a smoother, more rounded taste when allowed to rest for a period after processing in the spring, rather than being ground immediately.
Therefore, we age our Tencha under precise temperature control for a fixed duration before processing, resulting in a **mellow and palatable flavor**. We are one of the earliest tea wholesalers to offer ceremonial-grade matcha, and we continue to manufacture the highest quality Uji tea as a long-established industry leader.
The Art of Hekisuien Matcha Production

The production rate of Hekisuien's stone-milled matcha is **just 40 grams per hour per stone mill**. In this age, where high-speed grinders are prevalent for efficiency, this figure is highly inefficient in terms of productivity.
However, by sticking to the traditional stone-milling method, we enhance the matcha's **color, flavor, and aroma**, achieving an unparalleled **smooth texture**. Hekisuien carefully takes time to produce matcha to protect the taste passed down through generations.
