Founded over 150 years ago at the end of the Edo period in 1867 (Keiō 3), Hekisuien is a long-established Uji matcha producer.

Matcha Aging Process

At Hekisuien, we pursue a deep, mellow sweetness and rich umami in our matcha.
Tencha, the raw material for matcha, is shaded and carefully nourished before harvesting. Rather than grinding it immediately after processing in spring, it is allowed to rest for a period of time to mellow the flavor.

Under strict temperature control, the tea is aged before grinding, resulting in a smoother, more refined taste.
As one of the earliest wholesalers to provide ceremonial-grade matcha for the Japanese tea ceremony, Hekisuien continues to uphold its reputation as a premier Uji matcha manufacturer.

Stone Mill Grinding Process

Each traditional stone mill produces only about 40 grams of matcha per hour — an incredibly slow and meticulous process compared to modern grinders.
While this is far from efficient, Hekisuien insists on using stone mills to bring out the best color, aroma, and silky texture that define authentic matcha.

The artisans take their time with each batch, carefully maintaining the traditional flavor that has been passed down through generations.

    Compared to the other matcha brands that can be hard to get, this matcha isn’t too bad! While the color isn’t the most vibrant, it’s a lot better than most “ceremonial” matchas on the market. This matcha can be on the bitter side so it’s best for lattes, imo. I use like 3g on average to make a latte w this blend! However, I bought in early march for $41 (150g) & it’s already increased to $50+ . I’ll continue to buy this as it restocks as it’s a decent alternative to other brands like Koyamaen, etc. But I hope it doesn’t keep increasing price bc it’s not worth the $$$ for a somewhat bitter & less vibrant matcha like this one!
