Ingredients

Rolled oats 120 g 1 ½ cups
Raw nuts (almonds, cashews, or mixed) 100 g ¾ cup
Medjool dates, pitted 200 g ~12 large
Matcha powder (good culinary grade) 8–10 g 1 tbsp
Nut butter (almond or peanut) 40 g 2 tbsp
Honey or maple syrup 20 g 1 tbsp
Pinch of salt 1 g ~⅛ tsp
Optional: Add chia seeds, shredded coconut, or cacao nibs for extra texture and nutrition.

Steps

  1. Blend the nuts: Pulse nuts in a food processor until coarsely ground.
  2. Add oats & dates: Add rolled oats and pitted dates. Blend until sticky crumbles form.
  3. Flavor base: Add matcha, nut butter, sweetener, and salt. Blend until mixture holds together when pressed.
  4. Shape balls: Scoop ~1 tbsp portions, roll tightly into balls. Dust lightly with extra matcha if desired.
  5. Chill & serve: Refrigerate 30 min to firm up. Store in airtight container.
