Japanese Matcha vs Chinese Matcha – What’s the Difference?

Matcha has become popular all over the world. However, many people are surprised to learn that matcha is produced not only in Japan, but also in other countries including China.

While both products are called “matcha,” the cultivation methods, production process, and overall quality can be very different.

In this guide, we explain the main differences between Japanese matcha and Chinese matcha, and why Japanese matcha is often considered premium.


1. Differences in Quality

Japanese matcha is traditionally produced using carefully controlled cultivation methods and strict quality standards developed over hundreds of years.

High-quality Japanese matcha is made from tencha leaves that are shade-grown before harvest, carefully processed, and slowly ground into an ultra-fine powder.

This process produces matcha with:

  • Smooth texture
  • Rich umami flavor
  • Natural sweetness
  • Low bitterness
  • Bright green color

Matcha produced outside Japan can vary widely in quality depending on farming practices and processing methods.


2. Differences in Cultivation Methods

One of the most important differences is how the tea plants are grown.

For traditional Japanese matcha, tea plants are shaded for about 3–4 weeks before harvest.

This shading technique increases the levels of amino acids such as L-theanine, which gives matcha its characteristic umami flavor and smooth taste.

Shading also deepens the green color of the leaves.

Without this shading process, the resulting powder tends to be more bitter and less complex in flavor.


3. Differences in Production Methods

Another major difference is the grinding process.

Traditional Japanese matcha is ground using granite stone mills.

These mills rotate extremely slowly, producing only about 30–40 grams of matcha per hour.

Because the grinding process is slow and gentle, it prevents heat buildup and preserves the delicate aroma and flavor of the tea.

This is one reason why Japanese matcha tends to have a smoother texture and less bitterness.

Some mass-produced matcha powders are ground using high-speed machines, which can produce powder much faster but may affect texture and flavor.

4. How Matcha Is Defined in Japan

In Japan, the word “matcha” traditionally refers to powder made from tencha, which is shade-grown tea leaves that are steamed, dried, and stone-milled into an extremely fine powder.

Because of this traditional definition, powders made from regular green tea leaves are usually not called matcha in Japan. Instead, they are often referred to as powdered green tea (粉末緑茶 / funmatsu ryokucha).

While many powdered green teas around the world are marketed as “matcha,” authentic Japanese matcha specifically refers to powder produced from tencha using traditional methods.

Understanding this distinction can help explain why authentic Japanese matcha has a different flavor, texture, and price compared with other green tea powders.


5. The Rarity of Traditional Stone Mills

Stone mills used for matcha production are themselves traditional tools that require careful maintenance.

In Japan, the number of craftsmen who can properly maintain and repair these stone mills has become very limited.

Because of this, maintaining traditional stone-milling production is becoming increasingly rare and valuable.

This is another reason why authentic Japanese matcha remains a premium product.


6. Differences in Shelf Life

Another difference people sometimes notice is the shelf life printed on matcha products.

Matcha produced in Japan often has a relatively short recommended shelf life.

This is because Japanese producers prioritize freshness and quality. Matcha is a delicate product that can lose aroma and flavor over time, especially after opening.

For this reason, many Japanese producers intentionally set shorter shelf life periods to encourage consumption while the matcha is still at its best.


7. Not All Matcha Is the Same

Today, matcha is produced in several countries and comes in many different grades.
