How to Brew (Best Results)
Hot Brew (Umami-forward)
- Tea: 3g (about 1 heaping tsp)
- Water: 120–150 ml (4–5 fl oz) at 75–80°C (167–176°F)
- Steep: 60–90 seconds, then pour to the last drop
- 2nd infusion: 80–85°C (176–185°F), 30–45 sec
- 3rd infusion: a touch hotter, 20–30 sec
Cold Brew (Sweet & Smooth)
- Tea: 10–12g (2–3 tbsp)
- Water: 1L (34 fl oz), cold
- Steep: 4–6 hours in the fridge, then strain
- For a quick version: shake with ice water for 90–120 sec
