Brownies vs Blondies: Add 20–30 g melted white chocolate to the batter for fudgier “brownies.” Skip it and keep more brown sugar for chewier “blondies.”

Steps

  1. Prep: Preheat oven to 175 °C / 350 °F. Line the pan with parchment, leaving overhang.
  2. Wet mix: In a bowl, whisk melted butter, sugars, eggs, and vanilla until glossy.
  3. Dry mix: Sift together flour, matcha, and salt. Fold into the wet mix just until combined.
  4. Adjust style: For fudgy brownies, fold in melted white chocolate now. For blondies, skip this step.
  5. Add-ins: Fold in chocolate chips or nuts as desired. Spread batter evenly in the pan.
  6. Bake: 18–22 min (chewier) or up to 24 min (set). A few moist crumbs on a toothpick are ideal—don’t overbake.
  7. Cool & slice: Cool in pan, lift with parchment, and cut into squares. Dust with matcha if you like.
