Ingredients

Hot water (for matcha dip) 120 ml ½ cup
Optional liqueur (rum, marsala, or sake) 15 ml 1 tbsp
Tip: Use good-quality culinary or ceremonial grade matcha for the brightest green color and smoothest taste.

Steps

  1. Cream base: Whisk egg yolks and sugar over a double boiler until pale and thick. Let cool slightly.
  2. Mix mascarpone: Fold mascarpone into the cooled yolk mixture until smooth.
  3. Whipped cream: In another bowl, whip heavy cream to soft peaks. Fold gently into the mascarpone mixture.
  4. Matcha dip: Whisk sifted matcha with hot water (and liqueur if using) until smooth.
  5. Layer: Quickly dip ladyfingers in matcha mixture and line the bottom of a dish. Spread cream mixture on top. Repeat layers.
  6. Chill: Cover and refrigerate 4–6 hrs (or overnight) to set.
  7. Finish: Dust generously with matcha before serving.
