Ingredients

Baking powder 8 g 2 tsp
Salt 2 g ½ tsp
Granulated sugar 120 g ½ cup + 2 tbsp
Eggs (room temp) 2 large 2
Milk 120 ml ½ cup
Vegetable oil or melted butter 80 ml ⅓ cup
Vanilla extract 5 ml 1 tsp
Optional add-ins: White chocolate chips, azuki (red beans), or chopped nuts for texture and flavor.

Steps

  1. Prep: Preheat oven to 175 °C / 350 °F. Line muffin tin with paper liners.
  2. Dry mix: In a bowl, sift flour, matcha, baking powder, and salt together.
  3. Wet mix: In another bowl, whisk sugar, eggs, milk, oil, and vanilla until smooth.
  4. Combine: Gently fold dry mix into wet until just combined. Do not overmix.
  5. Fill & bake: Divide batter into muffin cups (¾ full). Bake 18–22 min until a toothpick comes out clean.
  6. Cool & serve: Cool on wire rack. Enjoy plain, or add frosting for cupcakes.
