How to prepare

Usucha (traditional)

Sift 2g. Add 60–80ml water at 70–80°C, whisk until frothy.

Koicha (thick matcha)

Sift 4g. Add 30–40ml water at 70–75°C, knead slowly (not frothy) until glossy and smooth.

Tips

Koicha works best when you sift well and add water little by little. If you prefer lighter taste, start with usucha.

Note: Fine matcha particles can clump due to static. Sifting helps create a smoother bowl, especially for koicha.

Can I use this for koicha?

Yes. Nyufune-no-Kaze is suitable for koicha thanks to its clean umami and very low bitterness. Sift well and add water gradually for a smooth texture.

Is it good for lattes?

It can be used, but this one is designed for tea ceremony and koicha. If you mainly drink lattes, Asahina-no-Yuki or Aobane-no-Tsuki may be a better match.

Why does matcha clump?

Fine particles and static can cause clumping. Sifting helps a smoother bowl, especially for koicha.

How many servings are in 20g?

Typically around 8–10 usucha servings. For koicha, servings are fewer because you use more matcha per bowl.

This is my first time ordering from MatchaJP, and first time trying other types of matcha powders other than the 'popular ones' like Ippodo Tea and Marukyu Koyamaen. I ordered this based on reviews, and when whisking this I thought the smell was quite seaweed-y. But when I poured ir over my fave Oatmilk (chobani) it was quite creamy and kind of nutty!Will order again!
